Who's behind the chocolate
My name is Carlos Galarza. My wife Isabel and I moved to Cedar Park, Texas, with our three little girls in 2018. And by November of 2018 we set up our Ecuadorian Chocolate Factory.
We left our 200-acre cacao plantation in the tropical climate of North-Central Ecuador in the hands of our siblings and four cacao experts. There, they grow our cacao organically.
WE CONTROL THE WHOLE PROCESS
In Los Rios, Ecuador, we grow, harvest, dry, and toast our cacao. Then, our cacao nibs are sent to our Ecuadorian Chocolate Factory in the US, here we process the nibs and transform it into pure and fine chocolate.

There are over 100,000 cacao growers in Ecuador alone.
That’s a lot of farmers for a country the size of Colorado!
Each one is farming their own way. Using pesticides and herbicides or maybe organically. Of course, their end goal is to sell as many cocoa beans as they can.
Additionally, they’re each selling their cacao harvest to large companies. These large companies then combine them all together, so they have enough to sell in the big market.
WHERE’S THE QUALITY CONTROL?
How can they be sure that there’s consistency throughout all of the beans they’re buying? And how much bad product slips through the cracks, blending together to meet the demand?

Enjoy the taste of one single source of rich, organically grown, aromatic cocoa beans.
Our cacao experts know when the pods are ripe and ready. And harvest them by hand with special shears.
They also carry out bean selection’s best practices: as it has been for generations before them.

After we dry, ferment, roast, and turn the cacao into nibs, we ship it to Cedar Park, TX, where we transform it into tasty chocolate in the form of bars or mouth-watering bonbons.
